keep it as cold as possible and handle it as little as possible

For pastry hands need to be the correct temperature, not too hot or too cold. For short crust pastry the perfect recipe is: 8 ounces plain flour, 2 ounces butter, 2 ounces trex. Water to mix to a nice consistency. Before binding the mixture with the water make sure flour and butter/trex resemble very fine bread crumbs. I pride myself on pastry & Dumpling making. :-)
