I like to bake my own bread and I make a mean crusty loaf, however....

.... I would love to bake "soft crust" rolls and loaves, any tried and tested methods?

Yeah but nothing works, crusty loaves are ok BUT Carol starts eating them straight out of the oven!!!

I might experiment baking over a water bath, see if that works?

What about putting a tea towel over them when they are cooling, not on top of them but sort of draped over making a tent, then the steam will make the crust soft
