    Discovered this completely by accident Smile I was making a plain sponge when I noticed we had a big cooking apple that was looking lonely so I cored it and chopped it into very small chunks, and then for kicks I put into the sponge mixture 3 very large tablespoons of honey but really thats just for flavour so do that to your personal taste, I like honey so I used 3 big tablespoons but you can use however much you want, anyway:

    100g butter
    100g caster sugar
    100g SR flour
    and two eggs (beaten)
    1 cooking apple finely cubed (I eat as I'm going along so if it looks like you have too much apple, maybe don't put it all in the mix lol)
    (optional) 3 Large tablespoons of honey
    put everything together apart from the flour and whisk, seive the flour and fold it in to the mixture, add the small apple cubes and honey and give a really good mix,
    pour into two greased cake tins (about 6 inch diameter)
    and bake for 20 -25 mins at 190C (gas mark 5 i think)

    The finished product should be very golden brown depending on how much honey you put it in, has a wonderful honeyed taste and then soft apple chunks, heavenly Smile

    ... and probably a fair shakes healthier than the chocolate mug recipe lol

    Another nice touch if your not totally sick of all the apple is to use some of the leftover apple to make apple butter, (recipe to come shortly) and use it as a filler between your two cake pieces, but hey use whatever you want Smile
    most jams work really well with the honeyed apple taste

    Hi Rob,well you didn't waste much time, can you iron as well, if so I have a spare room, you will have unlimited access to 3 Utonagan as well remember, I know it's a long commute to work.....but you would make an old woman very happy, a live in cook, dog walker and maybe even an ironer lol! lol! lol! lol! lol!
